As I type this I'm feeding my newborn baby after getting my toddler to bed. To say I've been busy and tired lately is the understatement of the year. Mornings are kinda hard around here. Especially before I have a cup of coffee and I'm always looking for something that is quick, easy and filling for breakfast. Enter these delicious and fluffy little egg cupcakes. It's like an individual frittata or omelet and they reheat beautifully in under a minute in the microwave. Yes, breakfast for several days that is on the table in under a minute! Easy peasy!
Ham and cheese breakfast muffins
1 dozen eggs
6 slices on Canadian bacon, diced
2 oz cheese, I like sharp cheddar
Veggies such as peppers, onions, mushrooms if desired.
Preheat oven to 350 degrees. In a large bowl crack the eggs and whisk well. Pour 1/4 cup of egg into a sprayed muffin tin. Divide ham, cheese and veggies among the twelve portions and bake until set, about 10 minutes.
Remove from oven, allow to cool and place in an airtight container for up to 4 days. To reheat, place two in microwave for 45 seconds or until just warm. Be sure not to over microwave or they will turn to rubber.
