Turkey Meatball Parmesan

I've been doing My Fitness Pal for a little over two weeks. I have really been enjoying it. I've even lost 5 pounds! I have added a nightly walk and have just been tracking what I've been eating. If you haven't tried it, you have to. It's like free Weight Watchers without all the points business. Since I am using the app, I'm making more healthy meals on a budget.  I wasn't quite sure what to make for dinner last week. It was about a million degrees outside, so I knew I wanted something quick. I decided to make something that packed a lot of flavor, was lower calorie and was filling.

This Turkey Meatball Parmesan is so yummy. It was like a gooey meatball sub without the bread. I served these with penne, but the next time I make these I'm going to skip the pasta and slap it on a roll.
It's like a lightened up version of this recipe.



Turkey Meatball Parmesan (serves 4)

1 lb of ground turkey
1-2 cloves minced garlic (use as much as you want if you love garlic)
1 tsp dried minced onion
1 tsp dried parsley
Salt
Pepper
1 jar of  your favorite sauce. I like Aldi's organic marinara.
4 slices of provolone or mozzarella cheese
Pasta or Italian Bread




Mix turkey, garlic, onion, parley, salt and pepper. Form into 4 patties. I used a 1/2 cup measuring cup and then flattened them a bit to make a patty. They were all uniform, and I knew just how much meat was there. Place them in a non-stick skillet and cook until they reach 165. Cover them with sauce and cook a few minutes more. After the sauce has reduced a little and you can see the tops of your patties, add the cheese. Give it a few minutes more to melt the cheese and serve. The next time I make these I am going to place the patty on a thick slice of Italian bread and pair it with a big salad.

With the pasta this meal came in under 500 calories, which I thought was pretty good. I also liked the turkey. It had a really meaty and hearty flavor. I wouldn't have known it wasn't ground beef. It was a hit with the family. It's always a trick getting everyone to enjoy dinner, but this was a favorite.
