Kale, Spinach & Strawberry Salad with Berry Vinaigrette

When I made this for dinner last night there was nothing left but a few stray kale pieces at the bottom of the bowl. My boys tried it. One liked it so much he was upset when it was gone. My husband even had seconds! Of a kale salad! It's so easy and fresh. It will be making another appearance on our menu very, very soon.

Kale, Spinach & Strawberry Salad with Berry Vinaigrette 

For the salad:
2 large kale leaves
1/2 package baby spinach
1/2 pint strawberries

For the dressing:
4 TBSP olive oil
2 TBSP white wine vinegar
1 TBSP water
2-3 TBSP black berry- black raspberry jam

To make the dressing, combine all ingredients in a mason jar or small container. Shake well until combined. You can double the recipe, and keep it in the fridge for a few days.

To make the salad, remove the spine from the kale, and thinly shred. Slice strawberries. Place kale, spinach and strawberries in a large bowl. Toss the salad with the dressing and serve immediately.

*Adding some diced chicken is really great too.

I hope you enjoy this salad. I know we did. I want to get more green into my family's diet and this was a really easy way. I like the way that the strawberries and sweet dressing encouraged the picky eaters to give it a try. For me that first bite is always the hardest. If I can get them to eat one bite, then they are way more likely to try it again. Baby steps. I just keep reminding myself baby steps.
