My slow cooker is one of my favorite cooking tools. I love the ease of being able to chuck a bunch of stuff in a pot and go about my day. When I get home I have a perfectly wonderful meal waiting for me. Today I am making such a meal. Over the weekend I happened to have hurt my back and really didn't want to have to bend to get my pans out of the cupboard. My trusty slow cooker was sitting there on the counter, ready to go. Here is a recipe that is super easy to make and tasty. I like to serve it with rice to soak up the wonderful stock that is left behind.
Chicken and Root Veggies
1 Cup Chicken Stock
1 Small Onion, Quartered
2 Carrots, Cut into Large Pieces
2 Cloves of Garlic, smashed
4 Small Potatoes, Diced
4 Boneless Skinless Chicken Breasts or Thighs
Parsley, Salt and Pepper to taste
Add root vegetables to slow cooker, and chicken stock and top with chicken. Sprinkle salt, pepper, and parsley over the top of all ingredient.
Set slow cooker to high and cook on high for 4 hours or low for 6-8 hours.Make sure the meat comes to a temperature of 165 degrees.
