Chicken Salad Stuffed Tomato

This is one of my favorite summertime treats. It is wonderful to pick a tomato off the vine and whip up this simple and beautiful dish. It is perfect for a luncheon.

Chicken Salad

1/2 Cup diced chicken
2 Tbs shredded carrot
2 Tbs chopped celery
1/8 tsp garlic powder
pinch of kosher salt
Pepper to taste
Mayo or Plain nonfat yogurt.
I usually use about a Tbs of each.

Mix all ingredients together.


Stuffing the Tomato
Slice the top off of the tomato to remove the stem area.
Take a small slice off the bottom of the tomato for stability.
Partially slice the tomato into quarters leaving the bottom intact. You don't want the sections to come a part.
Fill with chicken salad and enjoy!

Mmmm...love chicken salad! This looks like a delicious, easy recipe, especially while tomatoes are still good.
