Harvest Salad with Cranberry Dressing

Salads don't have to be bland, boring or covered in tons of dressing. Today's post features wholesome ingredients that are light, and tasty, definitely not bogged down with too much dressing. This salad is truly out of  this world.

Harvest Salad

Green leaf lettuce or spring mix
Dried cranberries
Orange zest
Cranberry Vinaigrette

Make a bed of the greens.

Top with apple slices, cranberries, walnuts, and feta.

Drizzle a few tablespoons of Vinaigrette over top.

Sprinkle with orange zest and enjoy.

Cranberry Vinaigrette

2/3 cup of gelled cranberry sauce
2 1/2 Tbs vinegar
2 Tbs orange juice
3 Tbs extra virgin olive oil

Pinch salt
Pinch sugar
Orange zest

Place cranberry sauce in a food processor. Blend until smooth.

Add remaining ingredients and blend until emulsified.

Put any remaining dressing in an air tight container and use within a few days.
