Eggs are a great source of protein, they are easy to make and are even a great source of Omega 3, if you buy the right eggs. I only use Eggland's Best eggs. They are vegetarian fed and contain Omega 3. I think they taste as close to farm fresh as you can get.
This is one of my favorite dishes, it is low cal, simple to make, is super versatile and heats up really well then next day. I like to make this dish the night before and then heat for breakfast the next day.
Ham, Swiss and Asparagus Frittata
1/4 cup milk
4-5 slices of deli ham
2-3 slices of Swiss cheese
1/2 cup fresh asparagus, (mushrooms, broccoli, or what ever you have on hand)
dash of salt
dash of pepper
Whisk eggs and salt.
Add milk and pepper continue whisking until well mixed.
Add eggs to an 8 x 8 glass baking dish.
Dice ham, cheese, and veggies add to eggs.
Bake in a 350 degree oven until set, about 30 min.
