Very Veggie Pasta Sauce

I really like this sauce and a food processor makes short work of all the shredding and dicing. This hearty and filling pasta sauce is filled with veggies. This dish is easy to prepare and is great with whole wheat pastas. It is a perfect way to sneak some healthy veggies past a picky eater.

Very Veggie Pasta Sauce

2 Baby zucchini sliced
2 carrots shredded
1 small onion,
1/2 bell pepper,
3 cloves of garlic,
1 small bunch of parsley,
6 basil leaves,
2 Tbsp. olive oil
1 Jar of your favorite pasta or tomato sauce
1 cup of water
Salt and pepper to taste

Makes 8 one cup servings

Working in batches mince the following ingredients separately in a food processor: onion, pepper, garlic, parsley, and basil.

To a large pot add olive oil. Place on medium heat. Add onion, green pepper and sliced zucchini to the pot. Saute until veggies begin to soften.

Add Garlic and Herbs to veggies and saute for an additional minute.

Add shredded carrots, sauce and water. Reduce heat and cook on low. Salt and pepper to taste.

The sauce is more flavorful the longer you cook it. Just make sure to stir frequently.
