Welcome Fall Menu: The main dish


Cornish game hens are really mini chickens, while they are a little more expensive than chicken, they are really juicy and perfect for 1 person. This recipe is really easy, but does take a bit of time and is perfect for a Sunday dinner.



Cornish Game hens with Asparagus bundles

Cornish Game Hens (1 per person)
Lemon wedges
Small onion, Cut into wedges
Garlic
Kosher salt
Pepper
Parsley
Olive oil, or grape seed oil

Preheat oven to 350.
Remove any giblets that may be in the hen,
Remove skin from hens, rinse cavity with warm water.
Place hens in a 13x9 pan.
Fill cavity with lemon wedges, crushed garlic cloves, and onion, placing any extra over top of the birds.
Season liberally with salt, pepper and parsley.
Drizzle with olive oil  and add a little water or chicken broth to the pan. 
Bake for about 2 hours or until they reach a temperature of 165 degrees.

To make the asparagus bundles,

Trim asparagus and wrap 5 or 6 stalks with a piece of bacon. Bake until bacon is cooked and asparagus is tender, about 15 minutes.

Your hens look beautiful, even if they are spread eagle. I'm sure they tasted great!
