I really like stewed apples. They are like apple pie without the crust. This breakfast takes delicious stewed apples and pairs it with a healthful whole grain cereal for a great and healthy morning meal. It's rich in fiber to keep you full, and the nuts add a little crunch and protein. Cinnamon, besides being delicious, helps to balance insulin levels and a drizzle of pure maple syrup also gives you a dose of antioxidants.
1 & 1/3 cup water
1 apple, peeled and diced
small handful of nuts
100% pure maple syrup
In a small pot place 1 cup of water on high heat to boil, and add 1/2 cup of oatmeal cook oatmeal to package instructions.
Place the remaining water in a small saute pan with apples. Sprinkle Apples with cinnamon. Cook on medium high heat until apples are softened and the water has evaporated. Add nuts to pan.
Add oatmeal to apple nut mixture and stir to incorporate. Drizzle with maple syrup and serve with extra cinnamon and a splash of low fat milk.
