This soup is easy to make and is really chases colds away. I think of it as health in a bowl. It has tons of filling ingredients, yet is surprisingly light and clocks in under 150 calories.
8 cups of chicken stock
1 small onion, diced
1 tbsp parsley
Salt and pepper to taste
1 small bunch of kale, chopped
2 potatoes, sliced into bite sized pieces
1 can of white beans, rinsed
In a large pan, saute diced onion in a little olive oil. Add garlic after onions have softened. Saute for about a minute. Add stock and seasonings.Add potatoes and cook until soft. Add Kale and beans and continue to cook until greens have wilted and beans are warmed. Soup can be served, or kept on low heat for several hours.
