Paula's Peach Cobbler
A few months ago I decided I would try canning. In 3 days I canned peaches, strawberry jelly, and hot peppers. I am very happy to report that not only did everything turn out beautifully, but I only had one mishap ( I didn't use gloves when I canned the peppers and my hands burned for 5 hours.) For my first time canning I feel pretty good about my results.
Being the rainy day that it was yesterday, I felt like cooking. I made a wonderful Chicken Noodle Soup that I will be sharing next week as part of my cook once, eat twice feature (not about leftovers.) I also made a really good Peach Cobbler from Paula Deen's Lady and Sons cookbook. Get the recipe here.
It was amazing and I had to pass it on! I did change the recipe up a little bit by adding cinnamon and vanilla to the batter and I topped with a little bit of whipped cream. This recipe is in serious need of a lightening up and if you are watching your butter or sugar intake, this might not be for you.
I was really surprised at the result. The batter looks more like pancake batter when you make it, but gets a great crust that is surrounded by soft fruit and a tasty sauce. The next time I make it I will be cutting the sugar by about half.
