Broccoli, cheddar, and Bacon Quiche

I hope everyone had a lovely Christmas! We had a great  first Christmas. It was so nice to have my family down to celebrate with us. It really was a nice day. We started our day off with a Christmas Brunch of sunrises, french toast casserole, thick cut bacon and this delicious quiche. We then unwrapped gifts and spent the rest of the day enjoying our time together and eating a ton!

Broccoli, Cheddar, and Bacon Quiche

1 frozen pie crust
6 eggs
1/4 cup milk
1/2 tsp salt
1 cup shredded cheddar cheese
1/2 cup chopped broccoli
6 slices of thick cut bacon, cooked and crumbled

Allow the pie crust to thaw, about 15- 20 minutes.
Mix eggs, salt and milk in a large bowl. Place 1/2 cup of cheese on the bottom of the pie crust. Top with broccoli, bacon and 1/4 cup of the cheese. Pour egg mixture over top of the other ingredients. Bake at 325 degrees until set about 25 minutes. Once the eggs are set top with remaining cheese and bake 5 minutes more. Serve warm.

This quiche can be baked ahead of time and served at room temperature, or can be easily warmed in the oven.

Hope you had a wonderful Christmas, and a happy new year!
