I made this soup last night and loved it. It is very simple, takes only a few minutes to prepare, is creamy, and has a wonderful asparagus flavor. Top it with a little cheese or a little sour cream.
1 large bunch of asparagus
2 cups chicken broth
1/2 cup heavy cream
1/2 tsp garlic powder
1/2 tsp onion powder
2 tbsp butter
Rinse asparagus, cut off woody ends, cut into 1 inch pieces.
Place asparagus pieces in a large stock pot. Cover with chicken broth. Cook over medium heat until tender.
Place asparagus and stock in a blender, covering 3/4 of the asparagus in broth. Place lid on tightly and blend until smooth.
Season with pepper, onion and garlic powder. Add butter and cream and blend again.
Garnish with shredded cheddar cheese, or a dollop of sour cream.
