Mashed Potato Casserole

I love mashed potatoes. In college they were my go to food. They have a great buttery flavor and a velvety texture that pairs well with pretty much anything, not to mention they are pretty cheap.This recipe is a little more dressed up and was used for a surprise Valentine's day dinner for my hubby, he loved them and we had leftover that I made potato pancakes with the next day. 

Mashed Potato Casserole makes 4 servings

4-5 Large Baking Potatoes
2 Tablespoons Butter
1/4 Cup Sour Cream
1 Teaspoon Dried Chives
1/2 Cup Cheddar Cheese, divided

Preheat oven to 350 degrees.

Peel and dice potatoes, cover with water and boil until tender.

Drain potatoes and mash with butter until smooth and creamy. Add remaining ingredients, reserving some cheese for the top, stir to incorporate.

Place potatoes in an oven proof glass container, cover with cheese, and bake until cheese is melted and potatoes are hot.

Tips: Pipe the potatoes into the casserole dish for an interesting presentation. Add bacon, garlic, or herbs for more flavor and color.
