Poached Pears


This week has flown by, my husband was out of town for work and my best friend and my mom came down. We shopped for my best friend's wedding dress and had a great time shopping, eating, and playing wii fit. After eating rather badly the day before, we decided we wanted a nice breakfast, that was light and healthy. This recipe immediately came to mind. It is great for an easy and healthy breakfast, or dessert and would work perfectly for breakfast on Valentine's Day.

Poached Pears

Pears
Apple Juice
Cinnamon
Mulling Spices (You could also use a little ground nutmeg if you didn't have mulling spices)

Preheat oven to 400 degrees.
Peel the pears, slice a small slice off of the bottom, so that they stand without wobbling.
Place pears upright in a baking dish. Add enough apple juice to reach about a 1/4 inch up the pear.
Sprinkle with cinnamon and add mulling spices to apple juice. 
Tent with foil and bake until just soft.
