Caprese salad made from fresh tomatoes off the vine, fresh basil out of the herb garden, and creamy mozzarella makes this salad a great pick for summer. It is one of my favorite summer salads and it is incredibly easy. I find that I always want this salad at the tail end of winter, when good produce is hard to find. I made it with produce from the grocery store the other day, and it was still delicious.
1 ball of fresh mozzarella, you can also use the block of mozzarella
1 bunch basil leaves
extra virgin olive oil
Cut tomatoes into 8 wedges, and cube mozzarella.
Stack basil leaves on top of one another, roll to create a tube, and slice into thin strips.
Add tomatoes, mozzarella, and basil in a large bowl, sprinkle with salt and pepper, drizzle with olive oil and toss.
Optional: Cut Italian bread into cubes, drizzle with olive oil and bake until lightly toasted, toss with salad for a crunchy addition.
