Rice is a canvas for other flavors to shine through. Sure, it has its own warm and nutty flavors, but it pairs so well with so many flavors. My dirty rice is packed with veggies and flavor.
2 large cloves of garlic, pressed
1 large onion, diced
2 carrots, diced
2 stalks celery, diced
1 can diced tomatoes
2 tablespoons olive oil
Kosher salt and pepper to taste
fresh chopped parsley for garnish
4 cups of rice
Put a large pan over medium heat, add oil and garlic, sauteing for about a minute. Add onions, celery, carrot and allow veggies to soften. Once the veggies have softened, add the tomatoes, salt and pepper. Toss veggies with rice, and garnish with fresh chopped parsley.
