Potato Chowder

This soup is amazing. It's my Mom's recipe with my tweeks. It comes together in no time, and is perfect for those chilly and rainy spring days.

Potato Chowder

5 Large Potatoes
1 Medium Onion
2 Stalks of Celery
1 1/2 cups Heavy Cream
3/4 Stick of Butter
3 Tablespoons Fresh Parsley, chopped
1/2 Tablespoon Salt
1/2 Tablespoon Pepper
1/2 Tablespoon Garlic Powder
Garnish with dried chives

Peel and dice potatoes,  cover with water and bring to a boil over high heat. Add onion, and celery and continue to cook until potatoes are fork tender. After potatoes have softened, reduce heat to medium. Add cream, butter, salt, pepper and garlic. Cook until all ingredients are hot, and the soup has thickened. Add fresh parsley, stirring to incorporate. Serve immediately with lots of crusty bread.
