Bread and Butter Pudding

I have been watching old episodes of Oliver's Twist on Netflix lately. Jamie Oliver made this amazing looking bread pudding and I just had to give it a try, with my twist of course!

Bread and Butter Pudding

4 slices of thick cut (about an inch) Cinnamon Swirl Bread
3 eggs
1/4 cup milk

Preheat oven to 350. Spray 4 ramekins with cooking spray and place on a baking sheet. Cut the bread into large cubes and place in the ramekins.

Whisk eggs, milk, and a splash of vanilla in medium bowl until all the ingredients are well mixed.

Pour the egg mixture over the bread, add a little pat of butter on the top, and top with a little sprinkle of cinnamon.

Bake until custard is set and the tops are golden brown, about 25-30 minutes.

Top with a little bit of vanilla sauce or pudding and serve warm. They are fantastic for a special breakfast!
