Easy Summer Pasta Toss

Quick and light this meal is perfect for warm nights when you don't want to cook and want something that tastes really fresh and comes together in just a few minutes. I love to make this after I have gone to my local farmer's market to pick up my produce for the week.

Easy Summer Pasta Toss Serves 4

2-3 Large Tomatoes
2 Cloves of garlic, pressed
1 Bunch of flat leaf parsley
Olive oil
Kosher Salt
1 Box of Pasta (Thin Spaghetti or Angel Hair)
Parmesan cheese

Bring a large pot of water to boil and cook pasta according to package instructions.

While the pasta is cooking, roughly chop the tomatoes and parsley.

Once the pasta has been drained, return it to the pot it was cooked in and drizzle with olive oil. Add garlic, tomatoes and parsley and toss until well mixed. Season with Kosher salt and pepper and cheese if desired.
