Egg and Watercress Sandwich

I made a stop at the Farmer's Market Wednesday and found a lovely bunch of watercress. I had some hard boiled eggs left from Easter and created this sandwich.

Egg and Watercress Sandwich- Makes 1 Sandwich

1 Egg, sliced- I just used the whites.
1 French Onion Laughing Cow Cheese
1 Whole wheat English muffin,

Toast the English muffin and spread with cheese. Top with watercress and egg. Enjoy!
