Ground Turkey Kabobs & Cucumber Bean Salad

These Kabobs are highly flavored and are really fun to eat. Serve them over a simple cucumber and bean salad for a delicious meal.
 Ground Turkey Kabobs- Serves 4
1 Pound of ground turkey
3 cloves of garlic, pressed
1 egg
1/2 tsp parsley
1/2 tsp celery seed
1/4 tsp nutmeg
2 spring onions, chopped
Pinch of Kosher salt
Large pinch of pepper
1 stalk of rosemary, chopped

Soak wooden skewers for 30 min prior to assembling kabobs.

Combine all ingredients divide mixture in fourths.

Place 1/4th of the mixture in the palm of your hand. Form the meat into the shape of a hotdog, and press the skewer into the middle of the meat mixture. Shape around the stick.

It can be a little tricky to get them to stay on, you want to make sure that you're not holding the stick, but the meat.

Once you get the stick to stay in the meat, Grill Kabobs about 4 minutes on each side.

Cucumber and Bean salad
1 can of white beans
1 large cucumber
1 lemon, juiced and zested
Olive oil
Pinch salt
Pinch pepper
1 Clove of garlic, pressed

Combine all ingredients, toss and serve.
