Soy, Garlic, and Ginger Marinade

I love this marinade on beef. The ginger and red pepper provide a little heat, the soy is a little salty, and the honey adds a little sweet kick to balance things out and get things caramelizing. Try it today on Chicken or Beef for a great Asian inspired meal.


Soy, Garlic, and Ginger Marinade

2 in piece of fresh ginger
4 cloves of garlic, pressed
1/2 cup low sodium soy sauce
1/4 cup olive oil
2 tablespoons of Sherry cooking wine
1 lemon or lime zested and juiced
1-2 tablespoons of honey
Pinch of fresh ground pepper
Pinch of red pepper flake (optional)
3 scallions, chopped

Using a microplaine, grate ginger into a medium sized bowl. Add remaining ingredients and stir until well mixed.  Pour over beef or chicken and marinade 1 hour to overnight.

You need to emphasize a healthy NON-GMO organic soy sauce! Most of the soy in america is GMO!

My favorite is San-J Organic Tamari. Have used for probably 20+ years. I used to buy the gold label, now they have a silver label which is reduced sodium and it tastes just as good. For those who avoid gluten it does not have wheat like some soy sauces.

We use tofu, tempeh and seitan rather than meat; I think I will try this for next tofu marinade. I usually just throw this and that in but having a basic recipe would be nice.
