Warm Rosemary Potato Salad

I love potato salad. It is cold and creamy and has a great flavor. The only problem is that my husband hates it. I created this dish that free of all the things my husband hates about potato salad and created this delicious warm potato salad. The best part- you don't have to worry that the mayo will spoil.

Warm Rosemary Potato Salad

6 medium sized potatoes
3 stalks of fresh rosemary, chopped fine
1 small clove of garlic, pressed
Kosher Salt
Olive Oil
Garnish with fresh chives and a drizzle of olive oil

Place whole, unpeeled, potatoes in a medium sized pot of salted water. Bring to a boil and cook until potatoes are tender. Drain potatoes and remove skins. Cut potatoes in to eights and place in a large a medium bowl. Season potatoes with a nice pinch of  Kosher salt, pepper and garlic. Dress with a good amount of extra virgin olive oil (about 5 tablespoons) and rosemary. Serve immediately while still warm.
