I was fortunate to pick up some very lovely heirloom tomatoes this week. I paired them with some amazing feta that I got from Linden Dale Farms and created this salad.
1 large yellow tomato
1 large red tomato
1/4 cup feta or other goat cheese
Herbs, I used fresh basil, but there are tons of options!
Slice tomatoes and arrange slices in alternating colors. Crumble feta over the top of the tomatoes, sprinkle with salt, pepper, and fresh herbs to taste. Drizzle with olive oil and enjoy.
