Mom's Baked Oatmeal

My mom makes this great baked oatmeal. It is wonderful straight from the oven, and also reheats really well for rushed mornings. There are tons of ways to personalize this recipe by adding different dried fruits and spices.

Baked Oatmeal Serves 6
2 Cups oatmeal 
1 Cup 1 percent milk 
1/4 Cup brown sugar 
1/2 tsp. salt 
1 1/2 tsp. baking powder
 2 eggs 
1/4 cup currants 
pinch cinnamon
 2 TBSP Olive Oil

Prepare 8x8 glass baking dish with cooking spray. Beat eggs with milk, add oats and stir. Add remaining ingredients and mix well. Bake at 350 degrees for 25 min.
