This is one of my first recipes, and one of my favorites!
Chicken in Herb Butter
1/2 Onion, Diced
3 Scallions, Chopped
3 garlic cloves, pressed
1/2 bunch of fresh parsley
1/2 stalk of celery finely diced
Pinch of dried thyme and dried rosemary
1/2 tablespoon of olive oil
1/2 cup chicken stock
4 boneless skinless chicken breasts
2 tablespoon of butter
In a large pan over medium heat, combine first 7 ingredients. Soften the herbs, and veggies slightly. Pour in chicken stock and top with chicken. Cook covered until it reaches 165 degrees. Remove chicken to a platter. Add butter to pan and stir to create a sauce. Pour over chicken. Serve immediately. I like to pair it with rice or fingerling potatoes and a large salad.
