Cold Summer Tomato Soup

To me one of the best things about summer are the tomatoes. Summer tomatoes are unlike any other time of the year. They are juicy, sweet and have a delicious flavor. They aren't mushy or hard but just soft and firm enough. This soup features summer tomatoes at their peak for a delicious and refreshing no-cook soup.

Cold Summer Tomato Soup

3 Large tomatoes with seeds removed
1 large pinch of Kosher salt
1 pinch of pepper
1/4 teaspoon garlic powder
2 Basil Leaves, plus more for garnish

Croutons, for garnish

Chunky Hot Salsa, for garnish
Place 4 bowls in the refrigerator.

In a food processor, combine tomatoes, salt, pepper, garlic, and basil. Blend ingredients until smooth. Refrigerate until well chilled, about 1 hour.

Pour soup into chilled bowls. In the center of each bowl place croutons, with a dollop of chunky hot salsa, top with a small basil leaf. Serve immediately.
