Peach Upside Down Cake

I was in the mood to make a pineapple upside down cake but my husband isn't a fan of pineapple. I picked up some beautiful peaches at the farmers market and decided to try a peach upside down cake. I have to say, the results were delicious. It is gooey and sweet with a delicious peach flavor. I will definitely be making this again!

Peach Upside Down Cake
3 large peaches diced
Dash of cinnamon
1/2 cup Dark brown sugar
1 tablespoon of butter, plus some for the pan
Yellow Cake Mix or other yellow cake batter to make a 9 inch cake

Preheat oven to 350 degrees. Lightly butter a 9 inch baking pan. Place brown sugar across the bottom of the pan in an even layer. Dot with butter.

Place the diced peaches in a bowl. Sprinkle with cinnamon.

Prepare cake batter.

Place peaches on top of the brown sugar in an even layer and top with cake batter.

Bake until cake is lightly browned and a toothpick inserted in the center comes out clean.

Immediately, place a plate upside down on top of the cake pan, and flip the pan and plate over. Tap the bottom of the pan a little and the cake should pop right out of the pan.
