This Week's Harvest

My garden has had a hard time this year. There has been a lot of rain, not much sun, and then like a flip was switched, excruciatingly hot weather. All things considered. I am happy to announce my garden has produced its first fruits!

Lemon Cucumber- These seeds were the only organics that I could find. We decided to test them this year. They are really cool. They look just like a lemon, and taste just like a cucumber. I highly recommend them.


Roma Tomatoes- I picked these Roma plants up at an Amish market for a dollar. I was impressed with how much fruit they can hold. I have about 5 tomatoes on one plant that will be ripening in a few days.

I am shaping up for one of my favorite summer salads!

Cucumber, Onion, and Tomato Salad

2- 3 cucumbers
1 sweet vidalia onion
3 good sized tomatoes
vinegar
Pinch of Kosher salt


Slice the cucumber, onion, and tomatoes into thin slices. Place in a large bowl. Sprinkle with Kosher salt and top with vinegar. Allow the salad to marinade for at least an hour before serving.
