Market Day Fritatta

My Market Day Fritatta is packed with veggies, eggs, and cheese for a satisfying breakfasts. It's a great pick when you have a lot of fresh veggies in your refrigerator. It's perfect for breakfast, lunch or dinner and has tons of variety. Let's get cracking!

Market Day Fritatta

1 large head of broccoli, chopped
3 carrots, cut into thin coins
5 large mushrooms, sliced
1/2 onion, diced
1/2 red pepper, diced
1/2 cup cheddar cheese, shredded
6-8 large eggs
1/2 cup milk

Place veggies in a large casserole dish. Place eggs in a bowl with the milk and whisk until well scrambled. Pour over veggies and top with cheese. Bake in a 375 degree oven for about 30 minutes or until the eggs are set, and the cheese is brown.

Looks like a good way to use up some zucchini right now by substituting for the broccoli. Herbs too.
