My parents were down for the weekend and I thought I would make them a trio of different pastas for them. This recipe is quick and easy and really tasty. If you are on a gluten free diet, this is a swap that is tasty, healthy, and gluten free.
Parmesan Zucchini Ribbons
2-3 medium zucchini
1 tablespoon olive oil
1 tablespoon fresh parsley, chopped
2 cloves of garlic, pressed
Place a large saute pan over medium heat and add olive oil. Using a mandoline with a guard*, thinly slice the zucchini into ribbons. Add garlic to warm oil and saute for about a minute. Add in zucchini and cook until just softened. Toss zucchini with parsley and Parmesan cheese and serve immediately.
*Mandolines are really sharp and it is very easy to quickly injure yourself. Use a guard. Even if you think that you don't need one, it's better safe than sorry. The only time I didn't use a guard is when I cut myself.
