I love hummus, the only problem is that I am allergic to chickpeas. I have begun to make my own hummus and bean spreads with white beans and have had a lot of success.
White Bean Spread
1 can of great northern white beans
1 garlic clove, pressed
1/2 tsp onion powder
2 tablespoons fresh parsley
Combine ingredients in a medium bowl and smash with a potato masher, or the back of a fork. I like the spread to be kind of chunky, but you could puree it in the food processor for a smooth texture. To serve as a dip, drizzle with a little bit of olive oil.
Spread on toasted bagels, use as a dip for veggies, spread in pitas or on pita chips.
