Meatball Stuffed Sandwiches

Crispy bread, melty cheese, meatballs and sauce, this sandwich is so good! It is even better the next day cold  for lunch. Serve it with a nice salad and extra sauce for a easy, filling, and comforting meal that is perfect for game day.

Meatball Stuffed Sandwich Serves 4-5

1 pound extra lean ground beef
1 egg
1/2 cup bread crumbs
1/2 tsp garlic powder
1/2 tsp onion powder
1 tablespoon parsley
4 cups pasta sauce
1 large loaf of Italian bread
1/4 pound of thinly sliced mozzarella cheese

Preheat oven to 350 degrees. Combine ground beef, egg, bread crumbs, garlic powder, onion powder, and parsley in a large bowl. Mix just until the ingredients come together. Roll into balls and place on a rimmed baking sheet. Bake until meatballs are brown, and cooked through, flipping them half way through cooking.

Heat sauce over medium heat, and add cooked meatballs. Slice top third off of the bread, set aside and hollow out the inside of the remaining 2/3 bread, leaving about a half inch of bread on all the walls. Place slices of cheese on the bottom of the bread, top with sauce, meatballs, and another layer of cheese.  Place the top of the loaf back on. Bake for a few minutes to allow the bread to toast, and the cheese to melt.

Serve with extra sauce for dipping.
