Meatloaf, Meatloaf, Double Beet-Loaf

Every time I make meatloaf I am reminded of the scene in A Christmas Story where the whiny little brother will not eat his meatloaf. I always have a quiet snicker in the kitchen as his meatloaf, meatloaf, double beet-loaf plays through my mind.. Meatloaf is quick and easy and I believe it is something that every home cook needs to have in their repertoire. It's a classic, it goes a long way, and there are tons of varieties you could make from the classic with beef to a grain loaf to please your veggie friends.

Parmesan Buttered Noodles and Peas round out this home style dish


Meatloaf

1 pound of lean ground beef,
1/2 cup of bread crumbs
1 egg
1/3 cup ketchup
1/2 of a large onion
Pinch of Kosher salt
Pinch of pepper
1/4 tsp garlic powder

Sauce

1/3 cup brown sugar
1/4 cup mustard
1/2 cup ketchup

Combine all ingredients for the meat loaf in a large bowl, mixing well to combine. Place in a loaf pan. Combine sauce ingredients and pour over top of the meat loaf. Bake at 350 degrees for about 45 minutes or until the loaf reaches 160 degrees.

Oh, yes, now that Fall has arrived there will soon be meat loaf. I make mine with brown rice, cooked lentils, lots of sauted vegetables, spices....top with catsup and brown sugar. Serve with mashed potatoes and gravy and plain yogurt.
