I love mushrooms. They have a wonderful earthy flavor and a meaty texture. There are a million and one ways I use mushrooms, but my favorite is this soup. It is quick and easy and all the ingredients are pantry staples. I whip some together when you are feeling under the weather, or don't feel like cooking.
2 packs of mushrooms, sliced
2 or 3 cups of chicken or beef stock
4 tablespoons of butter
In a large pot, place mushrooms with spices to taste. Drizzle in some olive oil to keep the mushrooms from sticking. Saute the mushrooms for a few minutes. After the mushrooms have begun to soften, add the chicken stock. Bring to a simmer, and cook for about 5 minutes. Stir in butter, and serve.
