Pumpkin Cake

This pumpkin spice cake is packed with flavor, super moist,  and incredibly easy. It is topped with cream cheese icing and walnuts for a tasty treat that is perfect for fall.

Pumpkin Cake

3 cups all purpose flour
1 1/2 cups sugar
4 tsp baking powder
2 tsp baking soda
1 tsp salt
2 TBSP cinnamon
1 TBSP nutmeg
1/2 TBSP ginger
1/2 TBSP cloves
1 large can of 100 percent pumpkin puree I like Libby's
1 stick of butter, melted
2 eggs
1 cup raisins
1 cup walnuts
Cream cheese frosting for a 2 layer cake

Preheat oven to 400 degrees.

Combine all dry ingredients except raisins in a large bowl. Mix pumpkin, eggs, and butter in a stand mixer. Slowly add dry ingredients. Stir until well mixed. Fold in raisins. Divide cake mix between two 9 inch cake pans and bake for 25 to 30 minutes.

Allow the cake to cool and frost with cream cheese. Top with nuts and serve.
