Vegetarian Chili


Hi there! I am Jenny Hull, Joy’s Mom. I offered to set in for Joy for a few days while she has a little break. I want to thank her for giving me an opportunity to offer some of my favorites here, and share a few recipes.

Recently, I gave up meat for a while. I am not a strict vegetarian as I will occasionally eat fish, but I mainly eat vegetables, fruits, and other proteins.  Here is one of my absolute favorite recipes for a Vegetarian Chili that is out of this world. Serve it with some rice for a complete protein that your body can readily absorb.  Top it with your favorite sour cream, or try one of the tofu sour creams available in most natural sections of your favorite grocery store.

2-3 sweet peppers (mix the colors!)
1 cup of chopped onion
1 can of black beans
1 can of pinto beans
1 can of petite diced tomatoes
1 cup of salsa
½-1 cup of corn
Pinch of cumin and oregano

Sauté the peppers and onions until they are soft. While the onions cook drain and rinse your beans. Add in the tomatoes, salsa, and corn.  Add a little water if you think it is too thick.
Cook until bubbling and heated through.  Add your beans. Heat through again and serve over rice.
