Twice Baked Potato Puffs

These potatoes are easy to make, and are the best of both worlds, smooth and creamy on the inside and crispy on the outside. Give them a try, I bet you can't eat just one!

Twice Baked Potato Puffs
3 Cups of Mashed Potatoes (I seasoned mine with chives and a little butter, but cheese would be good too)
Cooking Spray

Preheat an oven to 400 degrees. Place mashed potatoes in a pastry bag, and pipe out 2 inch dollops of potatoes. Repeat with remaining potatoes. Place in oven and cook until golden brown. Serve immediately.

Sounds delish! Our only problem would be having leftover mashed potatoes. But, should that day occur, this will be THE dish!
