This recipe comes from my Mom. She made this delicious coconut rice and it is spectacular. It reminds me of summer, and is destined to be served with some fresh pineapple, and some shrimp.
1 Can of Coconut Milk
1/2 cup of water
2 Cups of brown rice (or mix it up with some wild or black rice)
1 Medium Sweet Potato or Yam
1/2 teaspoon + Ground Ginger
1-2 teaspoons fresh Lime Juice
Combine coconut milk, water, rice and a little salt in a sauce pan. Give it plenty of room to boil. Cook rice according to package directions, usually 30-40 minutes. Stir once or twice during cooking. When the rice is done the coconut milk will be absorbed and look a little like the consistency of creamy rice pudding.
While the rice cooks, peel the yam and dice into bite sized pieces. Boil yam until soft, and drain.
When the rice is cooked, add the ginger and lime juice. Taste it here and add more ginger if you feel it is bland. Try some cinnamon as an addition. Stir in yam.
