Breakfast Burrito

Eggs are a great source of protein and aren't reserved just for breakfast around my house. This burrito is great any time of the day, and is a super quick meal when you are on the go.

Breakfast Burrito- Serves 4

1/2 yellow pepper,sliced thin
1/2 red pepper, sliced thin
1 onion, sliced thin
2 tomatoes, diced
5 eggs, beaten
1/2 cup shredded cheese
4 medium tortillas, warmed
Salsa or hot sauce for a little extra kick!

Spray a medium pan with cooking spray and saute the peppers and onions until soft. Remove to a bowl. Spray pan with a little more cooking spray and scramble the eggs until dry.  Divide eggs among the tortillas and top with peppers, onions, tomatoes, cheese, and salsa if desired. Roll and serve.

Tip: To save time, I like to slice extra peppers and onions and store in a freezer bag in my freezer, then when I want to make a burrito, I just grab a handful and go.
