Cabbage Roll Casserole (Crock Pot)

I have been a huge fan of cabbage rolls for as long as I can remember. In my family we called them pigs in a blanket, my husband's family calls them pigeons. My Nana made the best pigs in a blanket. They were absolutely perfect every time. I have been so hungry for them lately, but didn't want to go through all the work of making them just for myself. My husband isn't a fan of anything that involves cabbage. I picked up a head of cabbage on sale after St. Patrick's day and got to work on my new favorite casserole.

Cabbage Roll Casserole

1 small head of green cabbage, chopped
1 pound of ground beef, browned
4 cups brown rice, precooked
2 large cans of diced tomatoes, do not drain
1/2 tsp salt
1/2 tsp pepper
1 tsp garlic powder
1 tsp onion powder

Combine all ingredients in a slow cooker, and cook on high for 4 to 6 hours or low for 6 to 8 hours.
