Today is Dr. Seuss' birthday. It's the perfect day to make some green eggs and ham for breakfast. My Green Eggs are not full of food coloring, but filled with spinach for a healthy and filling breakfast.
Green Eggs and Ham
2 handfuls of fresh baby spinach
1 package of Canadian bacon
In a large pan cook Canadian bacon. Set aside. Spray a nonstick pan with cooking spray, and add spinach. Wilt spinach over medium heat. Whisk eggs and pour over wilted spinach. Scramble eggs. Serve with Canadian bacon and don't forget to read the book!
