Mini Crustless Quiches

I love quiche. It's wonderful for breakfast or paired with a salad for a light dinner. These Quiches are perfect to freeze, just pop them in the microwave for a few seconds and you're on your way.

Mini Crustless Quiches- makes 1 dozen
8 eggs,
1 cup chopped broccoli, cooked
1 cup sliced mushrooms, cooked
1/2 cup diced cooked onions,
1/2 cup shredded cheese

Preheat oven to 350 degrees.

Spray a muffin tin with cooking spray. Divide veggies among cups. In a medium bowl, whisk eggs until well mixed, pour over veggies. Top muffin cups with cheese and bake until tops are golden brown, about 20-25 min.
