I love this salad so much. The apples and nuts are crunchy, the chicken is warm, and the lettuce is super fresh. It's one of my favorite spring meals.
2 chicken breasts, seasoned with salt, pepper, garlic and onion powder
2 heads of romaine lettuce
2 granny smith or other crispy apple
1 cup walnuts
Italian or Caesar (not creamy) dressing
Cook chicken in a little bit of olive oil until it reaches 165 degrees. Dice into small cubes.
Wash and chop lettuce and apples and place in a large bowl. Top with chicken and nuts and serve with your favorite Italian or Caesar dressing.
