Grilled Chicken Salad with Walnuts and Apples

I love this salad so much. The apples and nuts are crunchy, the chicken is warm, and the lettuce is super fresh. It's one of my favorite spring meals.

Grilled Chicken Salad with Walnuts and Apples
2 chicken breasts, seasoned with salt, pepper, garlic and onion powder
2 heads of romaine lettuce
2 granny smith or other crispy apple
1 cup walnuts
 Italian or Caesar (not creamy) dressing

Cook chicken in a little bit of olive oil until it reaches 165 degrees. Dice into small cubes.

Wash and chop lettuce and apples and place in a large bowl. Top with chicken and nuts and serve with your favorite Italian or Caesar dressing.

Sounds good, well except for the chicken. But I could season my slices of extra firm tofu, grill them and substitute for the chicken. We are used to making changes to recipes.
