Lemon Pepper Chicken is one of my favorite ways to make chicken. It's bright, spicy, and perky. It's great in salads, used in a sandwich, or paired with some fresh green beans. This recipe is really easy and perfect for busy nights.
4 boneless, skinless, chicken breasts
1 clove of minced garlic
2 tablespoons of olive oil
Pinch of salt
pepper to taste ( I usually use about a teaspoon)
Place chicken in a resealable container. Juice and zest lemons and add to chicken. Drizzle with olive oil and add garlic, salt, and pepper to your liking. Allow the chicken to marinade for at least 2 hours. Grill.
