Pop's Pound Cake

My Pop makes the best pound cake ever. It's seriously wonderful. It's light and refreshing and really hard to resist. I love having it around in the summertime.It's wonderful with oranges or lemons, so make two and try them both! 

Pop's Pound Cake

1 cup butter, softened
1 1/2 cups sugar
1 tsp. vanilla
5 Tbsp. orange juice
1-2 Tbsp. orange zest (I like a lot of zest & depending on what you like you can also use lemon)
5 eggs
2 cups flour

Preheat oven to 325. Butter and flour a bundt pan, making sure to butter it well before dusting with the flour. Cream butter & sugar. Add vanilla, orange juice and zest, mix well. Add eggs one at a time, mix well after each egg. Add flour 1 cup at a time and mix just until incorporated but do not over mix. Spoon into prepared bundt pan and bake for 1 hour. Let cool about 10 minutes then flip out of bundt pan onto serving plate. If desired, top with powdered sugar glaze made with left over orange juice or simply dust with powdered sugar.

It looks delicious. Think I will make this for Mother's Day with sliced fresh fruit to put over. But haha, it is only actually "half-a-pound" cake. Where is the recipe from? I usually use the one from JOY OF COOKING. That uses mace for the seasoning and is also excellent.

Elizabeth, It comes from my grandfather. My Pop has been making it forever. I think he got it from my great-grandmother (maybe) I will have to ask him the next time I see him where he got it. Hope you like it. I LOVE IT!

I had seen another lemon pound cake on the internet but it used a bundt pan, which I do have but that does make a rather large cake. I like to make more than one dessert when we have a larger get-together, so this should be just the right size. I will sugar up a bowl of fresh fruit and have whipped cream too.

I will let you know after Mother's Day how we like it.
