My Pop makes the best pound cake ever. It's seriously wonderful. It's light and refreshing and really hard to resist. I love having it around in the summertime.It's wonderful with oranges or lemons, so make two and try them both!
1 cup butter, softened
1 1/2 cups sugar
1 tsp. vanilla
5 Tbsp. orange juice
1-2 Tbsp. orange zest (I like a lot of zest & depending on what you like you can also use lemon)
2 cups flour
Preheat oven to 325. Butter and flour a bundt pan, making sure to
butter it well before dusting with the flour. Cream butter & sugar.
Add vanilla, orange juice and zest, mix well. Add eggs one at a time,
mix well after each egg. Add flour 1 cup at a time and mix just until
incorporated but do not over mix. Spoon into prepared bundt pan and bake
for 1 hour. Let cool about 10 minutes then flip out of bundt pan onto
serving plate. If desired, top with powdered sugar glaze made with left
over orange juice or simply dust with powdered sugar.
