Pulled Chicken

If you like pulled pork, you are going to love this pulled chicken. It's super easy and tastes delicious! Grab some crusty rolls, some slaw, corn on the cob, and baked beans and you have a summer meal perfect for the upcoming Labor Day holiday!

Pulled Chicken (serves 4)

2 lbs of Boneless, Skinless Chicken Breasts
1 bottle of BBQ Sauce, I like Kraft

Crusty Rolls

Place chicken in a pot of water and boil until it reaches 165 degrees. Remove from water, draining pot, and place on a plate.

Place the chicken in the bowl of a stand mixer with the paddle attachment. Mix at medium speed about a 30 seconds or until the chicken is shredded. KEEP AND EYE ON IT! It goes from nicely shredded to chicken dust very quickly. If you don't want to pull out the mixer or don't have one, use two forks to shred the chicken into small pieces.

Place shredded chicken back into the pot, and pour BBQ sauce on to your liking. If you like your BBQ really saucy, add more. If you like it a little drier, add a little less.

Cook over medium heat until the sauce is hot.

Serve on rolls and top with slaw if you have it.
