Pasta Premavera

This recipe came together when I was hungry for pasta, veggies and cream sauce, but didn't have a ton of cream, cheese, or time to make the real deal. The most time consuming part is chopping the veggies.

Pasta Premavera

2 chicken breasts, cubed in 1 inch pieces
1 TBSP olive oil
2 cups of broccoli
1 cup carrots, sliced
1 cup asparagus, cut into 2 inch pieces
1/2 red pepper
1/2 yellow pepper
pinch salt
pinch pepper
1/2 tsp garlic powder
1/2 tsp onion powder
1 box of your favorite pasta, penne or spaghetti work well
1 block of reduced fat cream cheese

In a large skillet, heat olive oil over medium heat. Add chicken. Cook until done. Cook pasta according to package instructions. Add veggies to skillet with 1 cup of water and cover. When veggies are tender, add pasta, spices, and cream cheese. Stir to combine, and serve.
