Red Lentil Curry

We have temperatures in the single digits forecast for tonight.  It has been cold all week and seems to just be getting colder, and colder. This dish is the perfect way to warm up.

 Red Lentil Curry

1 medium sweet potato, diced
2 medium white potatoes, diced
3 carrots, diced
2 stalks of celery, diced
1 onion, diced
3 cloves of garlic, pressed
1 cup red lentils
5 cups vegetable broth
1 tbsp olive oil
2 tsp curry powder
1/2 tsp black pepper

In a large pot, combine onion, garlic, and olive oil. Saute for about 2 minutes. Add celery, carrot, and saute a few minutes more. Add potatoes, lentils, spices and broth and simmer on medium-low heat for about 30 minutes or until lentils and potatoes are softened.

Serve with Naan.
