My family loves tacos, but we don't have them often because of all the salt in the mixes. What do you do if you want to cut fat and salt from tacos? Try this meat free taco recipe. They are still everything I love about tacos, quick and easy to make, and fun. If you're looking for a meal to trick your family into a vegetarian meal, this is the recipe for you!
1 package of Morning Star Farms Crumbles or 1 pound of Red Lentils cooked in water until soft.
2-3 tablespoons of taco mix ( Try this recipe from All Recipes)
1/2 cup of water
2 cups corn
2 cups of rice, cooked
1 cup of black beans
Tortillas or Taco Shells
and any other toppings you want
Cook Crumbles or Lentils until heated throughout. Add 2 or 3 tablespoons of taco mix and the water. Cook until absorbed. Meanwhile, warm corn, beans and rice if necessary. Chop lettuce, tomatoes, and slice olives.
Layer corn, rice, black beans, and crumbles or lentils in shells or tortillas and top with cheese and sour cream if desired. Serve immediately with your favorite pepper sauce.
For Taco Salad:
Make a bed of lettuce, top with taco "meat," rice, corn, beans, tomatoes, and olives. Sprinkle with cheese and a dollop of sour cream if desired.
